Dukkah is a traditional Egyptian spice blend that has been used widely across the Middle East since ancient times and is a popular street food even today that is usually taken with olive oil and bread. The word Dukkah itself is derived from the Arabic word “to pound” or “crush” which describes how the blend is made by grinding the ingredients with a mortar and pestle. There are as many recipes for Dukkah as there are cooks in Egypt! However, the core ingredients of cumin, coriander, sesame, and sumac that are combined in most blends have been used in cooking for millennia and have been found in the tombs of the pharaohs!
