The Aztec and Mayan cultures of Mesoamerica were the first to cultivate and use chipotle peppers as both a food seasoning and as a medicine to treat common ailments including colds, asthma, and joint pain.  The word chipotle is actually derived from the Aztec word "chilpoctli", meaning smoked chile.  And, it was the Spanish explorer Alonso de Molina who first documented the use of chipotle peppers in 1571 where they were used by the Aztecs to make a special sauce that combined  tomatoes, nuts and lime juice to serve with fish and chicken.  You can now enjoy this ancient American seasoning with all of your grilled foods!
