Berbere as a spice blend originated in the ancient kingdom of Ethiopia and is related to the Amharic word meaning “pepper.” The ancient Ethiopian Kings controlled the Red Sea and the lucrative trade with India that brought Asian spices to Ethiopia where the merchants and cooks of the imperial city began to experiment with different blends. Berbere eventually became the preferred spice blend of the royal kitchens and was used in what became Ethiopia’s dish called “Wat” which is a thick spicy stew eaten with “Injera”, a large spongy flat bread used to scoop up the stew in your hand.
