Cumin has a heavy scent that is a mélange of warm, savory, spicy, and nutty aromas. On your tongue the taste is medium bodied, with peppery flavors of earth and leather. There's a slight bitterness on the finish. Cumin is an essential flavor in the cuisines of Mexico, India, the Middle East, and the U.S. Southwest. Whole cumin seeds can be roasted and coarsely ground or fried in oil to release their unique flavor.
The oldest cook book in the world comes from ancient Babylonia and is inscribed on stone tablets dating to 1750 BC. The tablets attest to the Babylonians' taste for highly spiced food with lots of onions, garlic and kamûnu, as cumin was called in Akkadian, the Semitic language in which the recipes were written. Cumin spread throughout Europe in the Middle Ages and in 13th century England rents were sometimes paid in cumin. When Spanish settlers first started to settle in the New World in the 1500’s, they brought cumin plants with them introducing this spice into what would become an essential of the Mexican and Southwestern cuisine that we now enjoy.
