This herb is a staple ingredient in many cuisines, most notably Mediterranean, and Swedish cooking. Dill is also quite a popular addition to soups, salads, vegetables and all types of potato dishes. Mix a little lemon with dill weed for a more pungent effect for making creamy bases like mayonnaise, cream cheese, yogurt, or white sauces. Dill is the perfect complement to fish as well as chicken. Adding dill weed to eggs, and cheese dishes, dips and especially white beans gives these dishes a subtle herb-like flavor. The seeds, of course, are well known for imparting their caraway-like flavor to pickled cucumbers. Add dill weed at the end of your cooking to preserve the delicate flavors.
