Spiced Brandied Cherries

YIELD: 1 pint        PREP TIME: 20 min          

 

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 1 ¼ teaspoon ground Vietnamese cinnamon (use freshly ground Vietnamese cinnamon if available)
  • ¼ teaspoon ground cloves
  • ½ teaspoon ground cardamom
  • 8 ounces frozen cherries or fresh cherries (pitted and stems removed)
  • ½-3/4 cup brandy

Instructions:

Put water in a small saucepan over low heat. Add sugar and spices and bring to a simmer. Stir until sugar dissolves. Continue to simmer for an additional 10 minutes. Remove the spiced sugar sauce from the stove and while it is still warm filter it through a fine mesh filter or cheesecloth to remove the larger spice particles.

Return spiced sauce to saucepan and warm almost to a simmer. Remove from stovetop and add cherries and brandy. Allow to cool, then store in the refrigerator for at least 4 days and up to several months.
