Roasted Tomato and Red Pepper Spread

YIELD: 6-8 servings        PREP TIME: 10-15 min       COOK TIME: 15-35 min     



  • 3 medium-sized tomatoes
  • 1-2 medium-sized sweet red peppers
  • 2 medium-sized yellow onions
  • 6-12 garlic cloves
  • 2-3 tablespoons Spice Your Life olive oil (we like Basil, Garlic, Tuscan, or any of our unflavored olive oils for this recipe).


Lightly oil a sheet pan or grilling pan with olive oil. Peel the onions and garlic cloves. Wash and pat dry the tomatoes and sweet peppers. Cut the tomatoes, sweet peppers, and onions in half. Remove seeds from inside the peppers. Lightly oil the outsides of all veggies and place cut side down on the oiled sheet pan.

Broil or grill the tomatoes, onions, garlic, or red bell peppers to char both sides. Monitor the veggies every few minutes so you can turn each piece after the side exposed to heat is somewhat charred, keeping in mind that each piece will char at a different time depending on its proximity to the heat source. After each piece is charred somewhat on both sides, remove from heat and place into a food processor bowl. Add Sicilian Seasoning Oil (https://spiceyourlife.us/blogs/recipes/sicilian-seasoning-oil) and purée. If you like, add your favorite herbs like oregano and basil to the puree as well. Season with additional salt, anchovy paste, herbs, and oil as desired.

This spread makes an easy and flavorful hors d’oeuvre served with baguette slices and a dollop of olive tapenade on top. You can also use this as sauce for homemade pizzas.


This spread will keep in your refrigerator for 1-2 weeks. The flavors intensify even more after the spread has been refrigerated overnight.
