Pomegranate Sumac Bubbly

Ingredients:
- 1 cup superfine or caster sugar
- 5 ounces pomegranate juice
- 1/4 cup Grand Marnier Liquor
- 2 1/2 tablespoons ground sumac
- 1 star anise
- 1 1/2 tablespoon chopped or pureed ginger
- 1/2 teaspoon dried thyme
- champagne, prosecco, or sparkling cider
- 4 ounces pomegranate seeds
Instructions:
Place sugar, pomegranate juice, Grand Marnier, sumac, anise, ginger, and thyme into a small saucepan and bring to a boil. Then simmer on low heat for 5 minutes or until sugar dissolves. Let it cool, then strain through a fine filter to get rid of the sumac grains. Discard the sumac grains and other infused ingredients and transfer the syrup to the fridge to chill. Before serving, place 2 teaspoons of the cooled sumac syrup into each champagne flute and add your sparkling beverage of choice. Stir the syrup into the sparkling beverage. Add a generous teaspoon of pomegranate seeds to the top. Garnish with lemon twist and a rosemary sprig coated with superfine sugar.
