Mini-Meatloaves with Smoky Molasses BBQ Sauce
YIELD: 3-6 mini-meatloaves REP TIME: 20 min COOK TIME: 35-40 min
- ¼ cup celery, diced
- ¼ cup onion, diced
- 1-2 tablespoons Butter Olive Oil
- ¾ cup bread stuffing
- 1 egg
- ¼ cup lemon juice
- 2 ½ tablespoons Spice Your Life Turkish Spice Rub
- 2 teaspoons Spice Your Life Garlic and Parsley Sea Salt
- 1 pound ground turkey
SMOKY MOLASSES BBQ SAUCE:
- ½ cup ketchup
- ½ cups dark brown sugar, firmly packed
- 3 tablespoons Spice Your Life Smoky Molasses Rub
- 2 teaspoons Spice Your Life French Mustard and Herb Spice Blend
- ½ teaspoon ground cloves
Preheat oven to 350°F.
Add 1 tablespoon Butter Olive Oil to a frying pan and sauté diced celery and onion over medium heat (about 5-10 minutes).
In a large mixing bowl combine bread stuffing, egg, lemon juice, Turkish Spice Rub, and Garlic Parsley Sea Salt. Mix lightly to moisten the bread stuffing. Then add the ground turkey and mix lightly but thoroughly using clean hands. Shape into 6 small meatloaves and place onto a lightly oiled baking sheet. Brush lightly with a small amount of Butter Olive Oil. Place in oven and bake for 15 minutes.
While the meatloaves are baking, prepare the Smoky Molasses BBQ Sauce by mixing all ingredients into a small bowl. Set aside.
After the meatloaves have baked for 15 minutes, remove from oven, baste each one with BBQ sauce, and return to the hot oven for an additional 15-20 minutes until the internal temperature is 165° F. Serve hot from the oven with additional BBQ sauce on the side if desired.
This recipe yields very moist mini-meatloaves are still moist and flavorful when served as leftovers. They also freeze well for those who want to prepare weeknight meals in advance.
