- 1 cup water (any temperature)
- 3 ½ tablespoons Lavender Flowers
- ½ cup sugar
- 4 lemons + 1 sliced for garnish
- 2 ½ cups cold water
Bring 1 cup water to a boil in a saucepan. Add Lavender flowers. Remove from heat and let steep until water starts to turn a purple color, about 12-14 minutes.
While lavender is steeping, place ½ cup sugar into a small bowl and add 1 tablespoon of lemon juice squeezed from one of the lemons.
Strain lavender water through a strainer into a heat-resistant pitcher. Add the lemon juice-sugar mixture, stirring until fully dissolved.
Squeeze remaining lemons through a mesh strainer into pitcher. Add the 2 ½ cups of cold water. Taste and adjust for sweetness and tartness. Add ice.
Serve chilled in 4 medium-sized beverage glasses. Garnish with small slices of lemon or sprinkle a few Lavender Flowers on top.
