Lavender Bee's Knees Cocktail

Ingredients:
Lavender Simple Syrup:
- 1 cup water
- 1 tablespoon lavender flowers
- ½ cup sugar
- ½ cup honey
Cocktail:
- 1 ounce lavender simple syrup
- 1 ounce freshly squeezed lemon juice
- 2 ounces of gin
Instructions:
To make the lavender simple syrup, add sugar, honey, and water to a saucepan and bring to a boil. Remove from heat, add lavender flowers, and stir to mix. Let sit for 15 minutes, then strain out the lavender.
Add lavender simple syrup, lemon juice, and gin to a cocktail shaker. Shake and strain into coupe champagne glass. Garnish with additional lavender flowers if desired.

Lavender simple syrup can be stored in the refrigerator for up to 2 weeks.
Bees Knee's Cocktails were popular during prohibition when honey was added to cocktails to cover up the less than ideal scent of bathtub gin. The phrase “bee’s knees” was popular slang during prohibition for “the best.”
