Easy Honey BBQ Chicken
YIELD: 4 servings PREP TIME: 10 min + 24 hr. to marinate
BAKE TIME: 20 min

Ingredients:
- 8 boneless skinless chicken thighs
- 2 tablespoons BBQ Rub
- 1 tablespoon Honey Chipotle Rub
- 2-3 tablespoons Olive Wood Smoked Olive Oil
- Sea salt to taste
- Coarsely ground Five Peppercorn Melange to taste
Instructions:
Honey BBQ Marinade:
In a small bowl combine 2 tablespoons of BBQ Rub and 1 tablespoon of Honey Chipotle Rub. Add enough Olive Wood Smoked Olive Oil to make a thick paste. Add more olive oil if a thinner paste is desire. Save 1/3 cup of the Honey BBQ paste you just made in the refrigerator to use for marinating the meat while it’s cooking.
Meat Preparation and Baking:
Add ~1-2 teaspoons of olive oil to a medium-sized baking dish and spread the oil evenly around. Pat the chicken thighs dry and place into the baking dish. Generously brush the remaining Honey BBQ Marinade all over the meat. Cover with plastic wrap and marinate for 4-6 hours in your refrigerator.
Preheat oven to 425°F. After the marinating period is over, remove the baking dish with chicken from the refrigerator and baste with some of the extra marinade you set aside in the refrigerator overnight. Bake chicken for ~20 minutes or until the internal temperature reaches 165°F, marinating ~1-2 times while baking.
Remove from oven and enjoy!
Notes:
This recipe can be used to make chicken drummies and chicken wings too. We think the flavor of the dark chicken meat is really enhanced by this Honey BBQ seasoning mixture, but if you prefer white chicken meat we recommend marinating the meat for a minimum of 24 hours.
