Chili Lime Chicken Fajitas
YIELD: 4 servings PREP TIME: 10 min MARINATE TIME: 30-45 min COOK TIME: 20-25 min
Ingredients:
- 2 teaspoons lime juice
- 2 teaspoons water
- 2 tablespoons olive oil
- 1 large garlic clove, minced
- 1 ¾ teaspoons cumin
- 1 teaspoon salt
- 1 tablespoon Chili Lime Seasoning (from Spice Your Life)
- 1 tablespoon fresh cilantro, chopped (optional)
- 1 ½ pounds chicken breasts, skinless and boneless
- 3 large bell peppers, cut into strips (I like to use 3 different colors)
- 1 sweet yellow onion, cut into thin strips
- 1-2 avocados with pit removed, peeled and sliced (optional)
Instructions:
In a large shallow bowl add lime juice, water, 1 tablespoon olive oil, minced garlic, cumin, salt, Chipotle Lime Seasoning, and cilantro and stir vigorously to mix well. Add chicken breasts, turning to coat all sides well and marinate for 30-45 minutes. Marinate longer if breasts are thick.
In a large skillet (12 inches or larger) over medium-high heat, add 1 tablespoon olive oil and heat the oil until it is quite hot and shimmering. Add the chicken breasts and sear both sides until light brown, cooked through, and charred in places on both sides. When the chicken is finished cooking remove breasts to a warm place and cover.
Next add onion and pepper slices to the skillet (adding more oil as needed) and sauté until the onions begin to appear translucent and charred around the edges and the peppers are charred and cooked but still somewhat crunchy (~6-12 minutes). Season with additional Chipotle Lime Seasoning and salt to taste.
Slice the chicken transversely into thin strips and serve warm on warm tortillas. Top with chopped cilantro, salsa fresca, sliced or mashed avocado.
Note:
I have marinated chicken breasts in this marinade for up to 5 hours before grilling them and it made the meat incredibly moist and delicious!
