Asparagus with Mustard and Herb Vinaigrette

- 2 teaspoons Spice Your Life Sicilian Lemon Vinegar
- 2 2/3 tablespoons Spice Your Life Garlic Olive Oil
- 1 teaspoon Spice Your Life French Mustard and Herb Blend
- ~20 spears medium asparagus
- Chunk of Parmesan, for shaving
- Salt, to taste
- Freshly ground peppercorns, to taste
Prepare the Mustard and Herb Vinaigrette by whisking together the first 3 ingredients. The vinaigrette will have the best flavor if you prepare it a few hours in advance so the flavors have time to develop.
Wash asparagus and pat dry. Snap off the tough ends and discard.
Preheat oven to 400°F. Lightly oil a baking dish or foil-covered baking sheet. Spread the asparagus spears on the dish/baking sheet, being careful to separate the spears a bit so they can bake on all sides. Drizzle with half of the French Mustard and Herb Vinaigrette and bake for 10-12 minutes. Remove from the oven and plate the asparagus portions. Drizzle with remaining French Mustard and Herb Vinaigrette. Shave thin curls of Parmesan over the asparagus.
Put extra salt, peppercorns to grind, and French Mustard and Herb on the table so diners can add these seasonings to taste.
