Aleppo Spiced Persian Cucumbers

- 12 medium Persian Cucumbers
- ¼ cup rice wine vinegar
- 2 teaspoons kosher salt
- 2 ½ teaspoons sugar
- 1 teaspoon Aleppo Pepper flakes
- 2 tablespoons chopped dill
- 2 tablespoons lemon juice
Slice each cucumber lengthwise into 4 pieces. In a large bowl combine the vinegar, salt, sugar, and Aleppo Pepper flakes. Add the sliced cucumbers to the vinegar marinade and toss well. Cover the bowl and refrigerate for 1-6 hours. Toss the cucumbers in the vinegar mixture 1 time while they are marinating.
When the cucumbers have reached the desired flavor intensity, toss with 2 tablespoons chopped dill and 2 tablespoons lemon juice. Adjust their flavor by seasoning with additional salt or other ingredients as desired before serving.
